Most mattresses today have a one-side design which means the bottom is usually not a quilted sleep surface. In fact, many mattresses actually use a fire-barrier type cloth on the bottom so you really wouldn't want to sleep on the flip side.
Our mattresses feature a quilted sleep surface on the reverse side, designed to provide a firmer feel, whenever necessary. If you have a comfort layer then flipping it will put you directly on the core. We also make the bottom quilt with a woven organic cotton which is tighter than our knit, so again it will feel firmer. The fabric is quilted to wool in a diamond pattern.
Why would you ever want to flip the mattress to make it firmer? Well because life happens. We had a customer who suffered a back injury. While he was in therapy, his orthopedic surgeon wanted him on a firm mattress for a few weeks. Having the ability to simply flip the mattress made his life a lot easier. There could also be times in your life where your comfort needs change (aging, weight gain or loss, etc). Since a natural latex mattress really can last decades, it's good to know you have options to easily change the firmness.
If for some reason you accidently damage the top quilting surface, or perhaps after many years and years and years of use, the fabric starts to go threadbare, it's nice to realize you have another quilted surface to use. If you have comfort layers and want to keep those on the top, the zipper allows you to reconstruct the latex inside.
When we design our products we develop ideas based on longevity, not planned obsolescence. We look for ways to implement function and practicality. With this reasoning in mind, making the bottom of our mattress with a quilted sleep surface made sense.
